Casserole- Pot Pie -Chicken with Biscuits!



Leftover chicken or roast chicken from the supermarket helps make this delicious comfort-style dinner easy. Fresh vegetables give an extra special flavor and are well worth the effort. Everyone loves chicken pie in the mother's bowl! Serve this dish with a green salad.

* Ingredients:

° 6 tablespoons butter
° 1 onion
° 1/3 cup flour
° 3 cups chicken broth*
° 1 teaspoon salt
° 1/2 teaspoon black pepper
° 1 cup heavy cream
° 12 ounces frozen mixed vegetables (1 1/2 cups)
° 10 ounces pre-cooked grilled chicken breast fillets (1 seasoned, cooked chicken breast)
° 8 uncooked biscuits (I used a box of Grands Buttermilk biscuits)

* Directions :

Heat oven to 400 degres f . Melt butter in a large skillet and saute onions until softened. Whisk in flour. Adding broth, salt // pepper and bring to boil.
Add cream, vegetables and chicken and heat. Pour the mixture into a 13" x 9" casserole dish and place the crackers on top. Baking for 25-30 min
